Nestled in the heart of Sausalito, Franko&Co is the brainchild of Iryna Nevozhai, a former tech recruiter from Kyiv who relocated to the U.S. a decade ago. Nevozhai has always envisioned a quaint European-style bakery in Sausalito, a vision that is now coming to fruition.
A Fusion of Cultures
The bakery’s name pays homage to the renowned Ukrainian author and philosopher, Ivan Franko, reflecting its deep-rooted Ukrainian heritage. The menu is a harmonious blend of traditional Ukrainian and Eastern European flavors, thoughtfully curated to cater to local tastes. Signature offerings include croissant sandwiches filled with prosciutto and pears or smoked salmon with cream cheese and dill, as well as croissants stuffed with berries, pistachios, or bacon and cheese. For dessert enthusiasts, Franko&Co offers Slavic classics such as Napoleon cake layered with puff pastry and custard cream, the rich and decadent Kyiv cake flavored with chocolate, and a multi-layered honey cake, a nod to the beloved 20th Century Cafe.

Behind the scenes, baker Sofia Terebova brings her expertise to the bakery. Formerly the owner of March & Co., a bakery in Kyiv that closed due to the war in Ukraine, Terebova also managed a bakery in Arizona before joining Franko&Co. Her dedication to preserving traditional baking methods ensures that each pastry is crafted with authenticity and care.

An Immersive Experience
Beyond the delectable offerings, Franko&Co aims to provide an immersive cultural experience. Ukrainian decor elements, including Carpathian sheep wool chair covers and traditional clay lamps, are being imported to adorn the bakery, creating an ambiance that transports patrons to the heart of Ukraine. Nevozhai emphasizes the importance of exceptional service, drawing inspiration from the warm hospitality she experienced in Kyiv, where baristas are knowledgeable and eager to share their passion for coffee and pastries.

Nevozhai has been actively engaging with the community by operating a stand at the Sausalito Farmers Market. Here, she introduces locals to syrnyky, cheese-stuffed pancakes popular in Russia and Ukraine, while also observing and adapting to the local palate. This initiative not only fosters community connections but also allows Franko&Co to fine-tune its offerings based on customer feedback.
